Egg Sausage Bake

This is one of my favorite breakfast dishes. It’s a super easy and you can make it the night before. It’s perfect for brunches, when you have over night guests and I make it every Christmas morning. Enjoy!

1 Large Pkg Crescent Rolls
1 Pkg Frozen brown and serve sausage
2 Cups grated Cheese (I use a Mexican blend, but you can use Swiss, Montery Jack, or Cheddar also)
5 Slightly beaten Eggs
3/4 cup Milk
1/2 tsp Salt
1/4 tsp Pepper
1/4 tsp Oregano

Lay Crescent Rolls flat on bottom of 9 x 13 pan. Spread up sides of pan. Cut sausage like pennies and place on top of dough. Sprinkle cheese over sausage. Mix eggs, milk, salt, pepper and oregano and pour over cheese and sausage. (At this point you may cover with plastic wrap and refridgerate overnight before baking.)

Bake at 425 degrees for 20-25 minutes.

My mom adds green pepper with she makes it. You can put 2 Tablespoons of chopped green pepper into the egg mix. I am not a fan of green peppers, so I don’t use them!

My friend Becky substitutes cooked bacon for the sausage. Just cook the bacon and then break it into pieces over the dough.

I try to make it healthier by using low fat cheese, turkey sausage and lite crescent rolls. 🙂
